A recipe for Greek zucchini pancakes from my friend Felicity - with my tzatziki recipe these are a knockout!

Ingredients
      1. 2 medium to large zucchini coarsely grated
      2. 1/2 C Feta cheese, crumbled
      3. 4 green onions, chopped
      4. 4 T. fresh dill, finely chopped
      5. 1 large egg
      6. 1/2 C flour
      7. 4 T Panko bread crumbs
      8. salt (a good coarse sea salt, if you have it)
      9. olive oil

Instructions
      1. Wash and grate zucchini using coarse grater (leave skins on)
      2. Put grated zucchini in a colander and sprinkle with salt - let drain for ~30 min
      3. Remove zucchini by hand and try to squeeze out as much water as you can
      4. Mix in a bowl with feta, onions and herbs. Mix in a lightly beaten egg.
      5. Add flour and bread crumbs and a heatly dose of salt
      6. Fry in shallow olive oil 3-4 min on each side until brown (this takes forever)
      7. Drain on paper towels - serve hot
